First the Rambam himself at the end of the Mitzvoth Asay explicitly lists the number of mitzvoth done by the "average person" nowadays. Second, I believe the Chafatz Chayiim wrote some type of book for soldiers dealing with their daily obligations (I honestly forget if it was written as a shulchan aruch or a sefer mitzvoth or both) Perhaps some other MJers will have more details.
